I Guess the Sun Didn’t Get The Memo…

Is it winter?

The weather outside has me questioning whether or not I am really home for the summer or if I should be expecting Christmas and the holidays. With constant rainy and cold days, the only thing there seems to be to do is bake…which isn’t necessarily a big problem. These honey chai oat bars are perfectly fitting for this dreary weather and bring the warm flavors that our taste buds crave on those cold winter afternoons. So while these may not be everyone’s idea of a summer treat, they are still delicious and I would be willing to top them with some ice cream and eat them any time of the year J.

A friend of mine loves lemon bars and so a few months ago I was making her some and quickly being reminded of how delicious they really are. But I had to question why we always make them “lemon” or “citrus” bars when they are so easily adaptable and could easily become “peanut butter banana bars” or “cinnamon sugar bars” or “mango coconut bars…” So as I was deciding what to bake the other day, I decided to finally try my had at a new variation of the classic lemon bar. After thinking of many different flavor combinations, I decided that I was craving honey, so the plan was to do a honey almond bar until I opened my cabinet and saw a box of chai tea and was inspired to use the chai flavors instead. I made the crust with some oatmeal and whole-wheat flour for a more wholesome and oaty crust, which is topped with ooey-gooey, and delicious chai and honey spiced deliciousness.


Honey Chai Oat Bars:

Crust: (you can easily cut change the flours to your liking. Use all white or a combo of any two or the three to total the same amount. Also, I cut out half the butter and replaced it with applesauce to make them a bit healthier, but feel free to use all butter!)

½ cup whole wheat flour

¼ cup oats (I threw it in the food processor to turn it into more of a flour)

¼ cup flour

¼ cup applesauce

¼ cup butter

¼ cup powdered sugar

Topping: (make sure you whisk it really well so it is all blended together!)

2/3 cup sugar

1/3 cup honey

1 egg, 2 egg whites

2 tbsp tea

1 tsp vanilla or almond extract

½ tsp baking powder

¼ tsp salt
